Bolyard's Meat and Provisions
Chris Bolyard's opened a little slice of meat heaven in Maplewood, just down Sutton from a little place called Strange Donuts. Aside from providing St. Louis with fresh, pasture raised meats, Bolyard's Meat and Provisions is also serving up a variety of cured meats - including beef heart pastrami - and a Thursday night smoke out. When I got the email Thursday morning that they'd be smoking whole chickens, chicken wings and rabbit porchetta (deboned then stuffed with chorizo), I had to have it all.
Here are some chicken shots for you to feast on. I took some of the rabbit, but it just didn't have the same #foodporn look that the chicken did. I can assure you, however, that it was all extremely, fantastically delicious.
