Cacio e Pepe
They say you should learn something new everyday, and I agree. Like on Saturday, for example, I learned that Pastaria not only makes my favorite pizza, but they also make a killer adult mac & cheese. They call it [symple_highlight color="blue"]Canestri Cacio e Pepe[/symple_highlight] because they've got to keep it classy. It's perfectly simple: freshly made pasta, pecorino and Grana Padano cheese, black pepper. That's about it. BUT IT IS INCREDIBLE. Those shells are way bigger than they look. These are the LEFTOVERS from what we didn't finish at lunch.
Look at how much food there still is! Insane.
Since I got some new studio lights, I figured I'd use my leftover pasta as my muse. While I'm happy with how the pictures turned out, I'm afraid they do not do the dish justice. It's so much cheesier than my pictures show.
You have to try it. And I heard a rumor that you can add some of the spicy Salume Beddu Nduja to it...oh my.
